Margarita's Mexican Restaurant Business Profile:

In 1985, in Concord, NH, Margaritas co-founder John Pelletier acquired his first Mexican restaurant; it quickly became a local favorite. Two more locations followed with John’s brother Dave joining him on the venture. With John leading the development of the Margaritas concept and brand, and Dave concentrating on the company’s operations, things began to really take shape - and heat up! They quickly realized, though, that if these restaurants were going to become something truly different, they needed more than just a Mexican menu. With that in mind, they took their first trip to Mexico in 1988, in search of something new and unique.

What they found there, well beyond the tourist trinkets and Americanized resorts, they felt compelled to bring back with them. It was something unique and real, something they knew would be welcomed with open arms in their restaurant. What they discovered was a collection of ingredients that, when combined, created the perfect experience. Colors, foods, art, music, drinks–it all added up to something wonderful.

So under the Guadalajara sun, inspired by the best Margaritas they’d ever tasted, they determined to import their discoveries to America, to bring Mexico home by the truckload. At the center of their plan were regular return visits to the region. With each trip they immersed themselves deeper into the culture and local art communities. They sampled the rich flavors and traditional dishes. And they developed a relationship with the people and an appreciation for their warm, genuine hospitality.

To this day, the trips to Mexico continue, but now they include managers, employees and friends. And on each return flight they bring with them something to add to the recipe. A new dish, new flavors harvested from centuries of family recipes, new décor ideas or a piece of art found in a small village outside the city. And, of course, an ever-growing love affair with the salty, sweet goodness of those wonderful Agave potions.
